Please note that these are US grown almonds. By law, domestic almonds must be "pasteurized" in order to be sold in retail channels. To retain the raw state of the almonds and to comply with the law, the best option was and still is gas pasteurization. The good news is that this process leaves no detectable residue after the almonds undergo the soaking and sprouting process. So please be assured that this nut butter is truly a health building food despite the controversial pasteurization requirements for domestically grown almonds.
