Virgin coconut oil is perhaps the best cooking fat on the earth. I am sure others will argue with me, but the wonderful taste and healthful properties are undeniable. Of course, if you are not a big fan of the coconut flavor, you will surely disagree.

This product is a minimally processed, certified organic, virgin coconut oil that delivers on taste, purity, and healthfulness. This is not the tasteless, processed “coconut oil” that most are familiar with. This is the real deal!

But isn’t coconut oil made up of mostly saturated fats and aren’t saturated fats bad for me?
Ahhh...I can see a bit of education is needed.

Fats, particularly saturated fats, have been demonized due to an erroneous, groundless assumption that the more saturated fats that are included in the diet, the higher the risk of cardiovascular disease. This is a theory with very little supporting science. Common sense would tell us that since traditional peoples from around the world consumed significant amounts of saturated fats from various sources (it's the quality that's important), and were found to be quite healthy and hearty, and some with low cholesterol levels (!), that something is amiss with the saturated fat-cholesterol-heart disease premise. It is not a proven link despite what the drug companies and your doctor tell you. I suggest reading “Cholesterol Myths”, available in our books section.  It is written by an MD and PhD and comes packed with supporting documentation.

Saturated fat facts: Did you know that saturated fatty acids are a favored source of fuel to burn for energy? They are also an integral part of cellular membranes and can be changed into unsaturated fatty acids.

Coconut oil is a rich source (approx. 83 %) of what are called medium chain fatty acids (MCT’s). These fats have been well studied and some offer significant benefits to our gastrointestinal tract. Dr. Jon Kabara has been studying MCT’s for many years, in particular lauric acid. He has found, among others, that lauric acid has significant anti-microbial properties. Although the exact mechanism of how it works is not known, he has noted impressive activity against several viruses, including the herpes family. Lauric acid is abundant in virgin coconut oil and comprises approx. 48 % of the total fat content of the oil.

• There is good reason to believe consumption of virgin coconut butter (oil) will help in weight loss efforts for many. Fat provides the feeling of satiety (feeling full, therefore one would eat less) and the short and medium chain fatty acids are an easy source for energy production in the body.  Sally Fallon and Dr. Mary Enig have done a wonderful job of re-educating us on coconut oil in their book, "Eat Fat Lose Fat".
