Apricot Kernal-Almond Butter BTR™, 8 oz.

BTR™ = Better Than Raw.  The Blue Mountain Organics folks do nut butters right!  They sort, soak, rinse, and dry their organic nuts and seeds at 108° F over 4 days.  Then they are freshly and gently ground into wonderful nut butter combinations.  While the three other nut butter varieties we offer are flavorful and palette pleasing, this combo includes the strong bitter flavor of apricot kernels. 

So why all the fuss about this process?  Well, the low temperature processing insures enzymes remain intact, and the oils and nutrients are preserved in their healthiest and natural form.  And the soaking reduces phytates, those naturally occuring "anti-nutrients" that inhibit absorption of some essential nutrients such as calcium, magnesium, iron and zinc.  In addition, soaking initiates the sprouting process in the nut, which begins to change the protein/fat/carbohydrate ratio, and naturally aids in making the fats and proteins easier to digest.  And if that wasn't enough, the soaking process reduces enzyme inhibitors that are responsible for that uncomfortable digestive strain one can experience after consuming plain old raw nuts or raw nut butters.  For comprehensive information from the Weston A. So why make a nut butter with bitter apricot kernels?  The alternative healing community has long trumpeted the potential of apricot kernels for fighting cancer due to its laetrile (referred to as vitamin B-17 by some, although not formally a "vitamin") content.  More information about apricot kernels/laetrile and cancer can be found here.  The inclusion of almonds help to ease the bitterness (or "odd" flavor) evident in this combo kernel and nut butter.  And of course almonds provide powerful nutrition by themselves, providing a good source of calcium, magnesium, vitamin E, etc.
